PLACE OF ORIGIN
Estates in the countryside round Guamaggiore, Selegas, 200 metres above sea level.
SOIL
Limestone-clayey structure, soft slope, good sun and wind exposure, average rainfall about 550 mm/year.
GRAPE VARIETIES
Monica, Carignano, Bovale Sardo.
CLIMATE
Mediterranean, mild winters, limited rainfall, very hot and windy
summers.
HARVESTING
By hand, in the early morning.
VINIFICATION TECHNIQUE
Fermentation at controlled temperature of 27-28 °C for 8-10 days with moderate extraction of phenolic substances. Development in cement tanks and for a short period in small casks of French oak. AGING
TASTING NOTES
Colour: Intense ruby red with an undertone typical of Monica.
Nose: Vinous, intense, characteristic.
Palate: Round, final aftertaste almost tending to sweetness, a typical feature of erect-shrub grown Monica grapes.
STORAGE
STORAGE
Constant temperature 18 °C, humidity 75%, controlled light, horizontal bottle.
SERVING
Medium sized goblet, temperature 16-18 °C.
FOOD MATCHES
Traditional pasta dishes dressed with tomato sauce, tasty fish stews, slices of grilled tuna fish, stewed lamb, pecorino cheese, medium matured.
